I remember playing an MMO called Earth & Beyond back in the day. It was all about flying and customizing your own spacecraft. There was also an element of third person to it.
It would be great to be able to customize and add to your own spacecraft.

Oh before I forget check out Space Engineers. It's like Minecraft, Legos, Freelancer, and Forge had a baby but you can fly whatever you create. There's a fun video of where two guys try out their star fighter designs against each other. One guy just makes a beast that's basically a pin cushion of guns facing in one direction. That game is in pre alpha, but I can see it being big if it gets polished up and some backing.
