Wait hold on, if the kettle's pressure [I]starts[/I] increasing after the kettle is closed (i.e. if it was left open UNTIL it started boiling), wouldn't the very substance's [I]properties[/I] change because of the increase in pressure inside? Chaz's reply makes sense.
