Being used and exploited for your entire life in exchange for ephemeral & superficial pleasures. You'll have a lot of money and sleep with as many beautiful women as you like (or men, or kids, or whoever/whatever else you want because these people lack any morals and don't care who they hurt).
But you'll pay for it dearly. They will own you. If you step out of line, you will be removed. If you attempt to expose them, you will be discredited. They will know your dirty secrets (and if you don't have any, they will make sure to give you some) and they will have the power to utterly ruin you, either bluntly (assassination) or subtly (blackmail, character assassination).
This is what is meant by "selling your soul". There is a metaphysical element to it as well, or so they believe, but it manifests in reality in the way I just described.
I think I'll pass on the assassination part.
But what would one even do? They bring you in because you're naive, all I can really imagine doing is watching security cameras all day or staring at a crystal orb.
The function of a member of the Illuminati, ultimately, is to serve the bloodlines. In practice, this means they are tasked with keeping the masses ignorant so that they can be exploited for the benefit of the cult and indoctrinating them with occult values to corrupt them & remove their ability to perceive reality for what it is.
The Illuminati perverts reality & constructs its own false reality in its place. This is another method of control. Reality is chaotic and unpredictable and beyond the reach of man. In contrast, a constructed reality, because it is an invention of man, can be controlled and manipulated by man. In reality, there are two genders. In a constructed reality, there are as many genders as you want. In reality, race is a collection of subtle morphological differences within the human species. In a constructed reality, race is an intrinsic part of the individual and a basis for classification & judgment of that individual. And so on.
That last part is actually really interesting. I myself do not believe they exist (no offense), and even if they did, I wouldn't be able to do anything about it anyway, so.
