It's a bit grey when it comes to strikes. Vanguard playlist strikes (eg Roc & Dragon) don't count towards grimoire. I used to play strikes a majority of the time and was confused why I was stuck at 200-something. So I did the original level ones whenever I ran bounties and soon hit the third grimoire level for them.
