Under that category I have the following options: Look inversion, look sensitivity, auto look centering, and controller vibration I have checked all categories. None contain a aim assist toggle on or off. You're welcome to try again though.

I thought the same. But after wanting to turn it off, I discovered it does not exist. Most likely a feature for future DLC
