The option to disable the assist should cover (at least) the following:
1) aim assist on gun barrels.
2) movement (=pursuit) with heavy melee of cyclone swords*.
3) aim assist for powered throwing melees, which depowers them if deemed close enough.
* Ex.: Falling Guillotine

Sliders, its 2022 people, Bungie developers should be smart enough by now to implement actual advance Settings for aiming. Remove the aim assist from perks in game and rework any that influence major aim assist (eg. Moving Target) and have an Aim Assist Slider in the settings to adjust how much Aim Assist you want/need. Personally, im fed up with how strong the aim assist is in Destiny but have you ever played a game on console with no aim assist on controller!? Rainbow 6 Siege comes to mind, mate the gunfights are just laughable at lower ranks. Imho, aim assist is neither a benefit or flaw on console, controller players dont have the amount of control and precision as M&K users do (they literally have an arm to move a curser, we have our thumbs), the only thing going is Aim Assist for target acquisition and even then the AA is (imo) too strong in certain cases... ... Yet that doesnt mean we should be trapped between a rock and a hard place of either having strong AA or none at all. Apex Legends and Overwatch settings are great when it comes to customising your aim settings and everything else for that matter.
