if you uninstall destiny you just make her win , atleast start to play another game excesivvely :) btw it isnt such a problem to start again , i started to play another psn account and had to replay everything and started collecting new items (needed another for lan-party purpose) , after few weeks i have quite a good item collection already, dont give up that fast , give it a week to settle down and you may still wanna keep playing destiny EDIT: after reading your "social experiment" edit i lost any form of empathy towards you :)

I'd be kinda pissed, but you've gotta give her credit for getting her message across! In the end it's video game loot, not money, not fame, and definitely not happiness. There's no reason to quit playing. Just use it as a new challenge: playing with only your shitty guns and cut back from playing so much. I would guess that you'll be happier and spend more time with your lady. You could also be that badass who finishes a raid with Husk of the Pit. Legendaries are better anyway and there no need to grind out the upgrades!
