It's been a while since I've seen one of these on bnet. So I figured I'd start another one. The holidays are here, so it's time to share your favorite recipes! Here's one of my own creations:
[b]Holiday Meatloaf[/b][spoiler]
Prep time around 20-30 minutes.
Cooking time: about 120 minutes
Ingredients:
5lbs of ground beef (fatty or lean, your choice)
8-12 chicken tenders
4 Roma tomatoes sliced into strips
6 Eggs
1 cup bread crumbs
2 cups of sliced mushrooms
1.5 cups shredded pepper-jack cheese
6-8 sticks (snack size) of pepper-jack cheese
2 cups diced white onions
3 cups desired veggies
Topping sauce
Directions:
Preheat oven to 350 degrees
Thoroughly blend together the ground-beef, shredded cheese, onions, bread crumbs, and diced onions. Take about 2/3 of the mix and place into a 14" round cake or bread pan spreading the mixture evenly in the pan creating a bowl. place the chicken tenders on the bottom of the bowl, layering the cheese sticks, sliced tomatoes, mushrooms and veggies. Place the remaining mixture on top of the 'bowl' covering the stuffing.
Cover it with foil and place in the oven for approximately 90 minutes before raising the temperature to 400 degrees for 20-30 minutes and covering the meatloaf with desired topping sauce (for this, I used a wonderful honey BBQ sauce), until the juices begin running clear.
Remove and serve hot. Enjoy![/spoiler]
