Humanity isn't some sort of ultimate goal or "the most evolved species". Nothing is waiting to evolve, and a species does not turn into another. A species produces another, and this process is incredibly slow. You're basically using the "If humans came from monkeys, then why are there still monkeys?" argument with that, along with your previous (faulty) claim of it can't be true because nobody's seen it (it's visible in crops, dogs, insects, bacteria, ect.).
So, why are there still monkeys? Because evolution isn't a linear process. New species often come from groups that were separated from the main population, perhaps by natural forces or by slightly different needs. Survival of the most passable comes into play, where terrible combinations of traits die off, and more ideal traits for the situation have a couple more kids. The original breeding population (the monkeys) haven't changed, because they're still in the same situation as before. The new population (the somewhat different monkeys) have been separated from the main group for so long that they would no longer seek to breed with them should they meet. Once again, this takes a few hundred thousand years just to make this difference. If the new group moved into a rather harsh environment, differences would appear between the two groups more quickly.
