Gumbo

Ingredients:
1. 2 tbsp Olive oil
2. 1 red onion diced
3. 1 red bell pepper, deseeded and diced
4. 2 garlic cloves diced
5. 5 spiced sausages, preferably italian
6. 1 tbsp paprika
7. 1/2 cup of rice
8. 3/4 cup of white cooking wine
9. 2 cups chicken stock
10. 4 spring onions, diced
11. 1 large dummy thicc tomato, diced

Procedure:
1. Add oil to a heavy-based casserole pan and saute the onion for 5 minutes until soft but not coloured. Add the pepper and garlic and cook for 2 minutes.
2. Slit the sausage skins and crumble the sausage meat into the pan, then cook over a medium heat for 4–5 minutes until darkened . Add the paprika and mix. Season to taste.
3. Wash your -blam!- hands and cutting board because you just touched raw meat. Don’t skip this step or you’ll get food poisoning.
4. Add the rice and stir well to mix thoroughly and absorb the flavor. Deglaze the pan by pouring in the white wine and scraping any bits stuck to the bottom. Add the stock and lower the heat a little and allow it to simmer. Cover pan with a lid and simmer the gumbo for 20 minutes until the rice is tender and the liquid almost entirely absorbed.
5. Remove from the heat, gently fold in the spring onions tomatoes and serve.
