Perhaps the Undying Mind somehow capped the Infinite Forest’s potential. Maybe the Forest actually does have that power.
There is also some structures that look VERY similar to the Vault of Glass. Maybe that has something to do with it.
Maybe the Infinite Forest has always been able to manipulate time. Maybe its “simulations” are actually the Vex viewing different Timelines.
Because for one, how would the Vex know what their Future selves look like?

Osiris did suggest it in the trailer, after all.
There is also some structures that look VERY similar to the Vault of Glass. I figure that place is more of a symbolic checkpoint, like the 3 towers inside the Forest that lead to past, present and future.
Maybe the Infinite Forest has always been able to manipulate time. The Forest is only simulations, but the Vex have many places for time travel. The Vault of Glass, the Citadel, the Pyramidion, the Black Garden, and other unknown places/gates. That’s some very good input. Thanks!
