Your Ghost probably fixes whatever was wrong with your body when he revives you for the first time. This could include age: if a grizzled old veteran of two foreign wars is chosen, his new body might have gray hair (like Osiris), but will be in the prime of life. And his lionhearted grandson who died in the Collapse alongside him might awaken to find that he skipped over puberty (no great loss) and is now the same age as his granddad.

Eek... that could be considered offensive because it implies those of a short height have something "wrong" with them. Even if not intended.

Then I'd also be saying that children have something "wrong" with them because they're small, and older people have something "wrong" with them because they're old. Neither is the case. I'm just suggesting that since most new Guardians are centuries dead and really just dust and bone fragments when their Ghost discovers them, said Ghost has to build them a new body from scratch. Just as easy to make that body youthful and muscular, for maximum combat efficiency.
