I don't get why the PS4 and even Xbox one is having a hard time to making games 60fps and 1080p and then the Wii U is the Super Saiyan 3 of 1080p/60fps.
Can someone explain this to me?

Because the requirements for Wii U games are a lot lower. It's a lot easier to make a game that looks like it was released in 2006 be 1080p 60fps than it is to make a modern game meet those standards.

Extremely low poly count/hardly any items on screen.

Items are low because it's a bossfight. It isn't about the amount of polygons, it's what you do with them. this game looks 2011 AT LEAST.
