Pics when it's done? Also, wouldn't mind seeing a chili recipe from a real Texan. I'm just now working on developing my own vegetarian recipe with TVP. Not bad so far.

I'm not a real Texan, I am an import. And I am not a chili-purist. It's a generic chili, though when I am feeling up to it, I will do a proper chili with cubed beef, no tomatoes no beans. But my wife can't stand that version, so I would have to eat it myself.

Ah, where from? I'm from the NW and have a vegetarian wife so my chili recipe is based around black and kidney beans and TVP. Not close to purist at all.

Got tired of dealing with hurricanes, my company's HQ is in TX, and at the time I was doing a lot of business travel. Being in the center of the US made everything closer.

Makes sense. How is the food scene compared to Florida? Do you miss getting an awesome Cuban sandwich or is it still readily available in Texas?

It's more international here in TX, but is lacking in Caribbean and West Indian food. Hard to find good bagels or Cuban food.

You win some, you lose some...You just need a way to import some Cubans and New Yorkers, then you need to find capital to start a bagel shop and a Cuban cafe', then build out the businesses and get all of the licensing in order and voila! Easy as 1, 2, 3...
