Is it a rarity to not listen to podcasts these days?
I'd say so.
If you do, what do you specifically like about them? What are some of your favorites?
I like hearing people's opinions, points of view, and takes on certain things. I typically listen to the H. P. Lovecraft Literary Podcast and occasionally Joe Rogan. I'd say TEDTalk but not sure if that really counts as a podcast.
And if you've created one before would you mind sharing it? And did you enjoy the process?
We've only done one episode and still working on audio bugs (along with video/streaming issues). Had a lot of fun though. Maybe I'll share once we get some of the kinks out.

TED has a podcast. I believe it's put out by NPR. Never saw the appeal of Joe Rogan though.

I'm not a big fan of him so much as his guests. Personally I think he tends to, perhaps subconsciously, just go along with what the guest says. At times he seems to contradict things he's stated in other episodes with different guests. He's able to get some interesting people on his show though.
