Hey there! To restore your connection, you need to re-connect your Twitch account to your Bungie.net account. Unfortunately, Twitch Prime rewards can only be claimed one time - if you don't see them in your Partner Rewards, you may want to re-link your accounts together then wait until next month to claim that Gear Drop then see if they appear in Amanda Holliday's inventory in the Tower Hangar. https://twitch.amazon.com/tp/oauth/start/bungie?overwrite=true&redirectUrl=https://twitch.amazon.com/prime/loot/destiny2

Why would I have to reconnect an already connected/linked account? That seems like terrible twitch prime reward implementation. Also, the twitch prime 7 bundle is currently showing in my partner rewards....as I mentioned in the original post.

If your rewards have not appeared with Amanda Holliday, something has occurred when you were connecting twitch with Bungie.net. This can also happen if you do not have Amazon/Twitch Prime. Your only way is to reconnect and wait until the next drop.
