Skin colour of a populace can evolve and adapt to surroundings in just 100 years. Adam and eve are from a long while ago so it is plausible that some of their descendants, after god's division of them after the tower of babel, settled in (eg) africa where their skin colour changed over millenia.

White skin turns darker on a generational scale in equatorial regions to enable them to radiate heat faster (as darker colours/shades gain/lose heat faster) as well as to reduce sunburn as the colour of the skin allows it to handle more radiation before burning. Also, you are pretty ignorant to assume that I cant believe in darwin's evolution if I am christian. Christianity and evolution do not contradict each other of which many christians know. The bible says the world was created in 6 days. This, like other passages in the bible, is a metaphorical way of describing creation. Instead of 6 days, consider each day as 'n' time. 'n' remains undefined so can be either millenia of a century in each instance. If you look at it this way, it bears close resemblance to the scientific take on creation. This is my little example of how the bible and science do not contradict each other.
