Lots of "right" ways to make a steak, but I've experimented with a lot, here's my favorite:
- New York Strip or go home
- Salt steak. Let it sit for 30 minutes, or until the juices have risen to the surface and then gone back inside the meat. If juices are still beading on top of the steak it's not ready yet
- 2 tbs of olive oil on high heat until hot
- Sear on first side 1-3 minutes depending on thickness and temperature preference
- Flip
- Add 1 tbs softened or melted butter
- 1-2 minutes on second side depending on thickness and temperature preference, continuously scooping butter over top of steak
- Thermometers ensure perfection and, contrary to popular opinion, do not take away your man card. Perfect medium rare is 130 degrees at the middle.
- Add pepper just before finishing
- Remove from pan to plate
- Let rest 5 minutes before eating
