Lots of "right" ways to make a steak, but I've experimented with a lot, here's my favorite:
- New York Strip or go home
- Salt steak. Let it sit for 30 minutes, or until the juices have risen to the surface and then gone back inside the meat. If juices are still beading on top of the steak it's not ready yet
- 2 tbs of olive oil on high heat until hot
- Sear on first side 1-3 minutes depending on thickness and temperature preference
- Flip
- Add 1 tbs softened or melted butter
- 1-2 minutes on second side depending on thickness and temperature preference, continuously scooping butter over top of steak
- Thermometers ensure perfection and, contrary to popular opinion, do not take away your man card. Perfect medium rare is 130 degrees at the middle.
- Add pepper just before finishing
- Remove from pan to plate
- Let rest 5 minutes before eating

You could also sear it in the cast iron and finish it in the oven. There are shit tons of ways to cook a steak lol
-
Damn that sounds delicious. Going to have to copy and paste that recipe for later.

I've been told to oil the steak itself and not the pan.
-
I've never heard that, but my first thought would be, if you do that how is the oil supposed to get hot? Putting the steak into hot oil is crucial in order to sear the outside of the steak and seal in the juices so the steak doesn't end up dry.

Valid question. Unfortunately I don't know the answer. Great post btw

Thats how my husband does it.

Pan seared steaks are making a widespread comeback. For the longest time, people were under the impression that it needed to be done on a grill, coal, charcoal, flame, etc. in order to be "steak". People learning to do their own steak on their own cooktop at home (I love my cast iron for mine!) is a welcome return to sanity and teaches people that there's nothing like doing it yourself.
