I just don't enjoy steak. I have had maybe 2 good steaks. Even expensive restaurants fail to deliver something free of disgusting fat everywhere.
Just the other day I learned that restaurants serve super fatty steaks on purpose.

The thing about steak is that it's fat content varies differently depending on the cut. If you don't like fat, order sirloins or filet. Stay away from ribeye and anything that says "marbled". The most you will get is a bit of fat on the edges that you can easily cut around.

I love fatty steaks man. They are more tender and seem juicier to me.

Try venison or bison, both are extremely lean meats.

If you don't like fatty beef, try finding bison. It's a lot like beef, but incredibly lean. It cooks VERY quickly and can dry out if you're not careful. But done properly it is very flavorful and has much less fat. The muscle tissue in beef is what provides the beef flavor, the fat (and how it is dispersed) is what can give the steak its tenderness. The less a muscle is used, the less connective tissue it has and that is what makes beef from certain parts of the steer more appropriate for steaks than say a roast or better suited for cubed or ground beef. For example, the tenderloin isn't as a "muscular" as the shanks or the chuck. Those areas are more muscular and to get them tender, you need to cook them longer to break down the elastic tissues and fibers in the meat. But from the loin, that area is also where fat is stored. It's best (for steaks) to have marbling, (which is small amounts of fat evenly distributed within the muscle) than it is to have trimmable fat on the outside edges of the cut. Marbled fat (when cooked) will melt under the heat of cooking and makes the already tender steak even more so and depending on the quality of the beef, can even be cut with the edge of a fork.

Had some bison nachos or something like that at a Cabela's once. Delicious and, as you said, incredibly lean.

I love bison, either for steak or burgers. It's an awesome alternative.
