no they're pre-determined and you will get old stuff most likely. Several people tried that with TDB

Engrams are not pre-determined entirely. If you get an armor engram on your warlock, store in the vault, get it out with your titan and decrypt it, it will be a titan armor piece. If they were pre-determined, it would be a warlock piece.

I get engrams all the time and they decrypt to the wrong class

I have a 31 titan that I do roc strikes with. I take the blue engrams I get and move them to my hunter and warlock and decrypt them there. They always come out as armor for the hunter and warlock. Explain that if the engrams are pre-determined.

I get a blue engram on my Titan, decrypt it , never stored, and it decrypts to a hunter piece, explain that

The behavior of the armor engrams suggest that the engram can drop in two ways as related to the guardian class. 1) specific to a guardian class regardless of which decrypts it. 2) specific to the guardian class that decrypts it. Your scenario falls under item 1. My scenario falls under item 2. I would also add that item 2 is the majority case from what I've experienced. Item 2 is also what makes the engrams not pre-determined in entirety as I said at the beginning. The guardian class isn't determined until it is decrypted. I'm not saying engrams should be saved as the original poster asked, I don't think that would accomplish anything. But to say that engrams are 100% pre-determined in what they will be when they are dropped is wrong.
