When did Covenant weapons learn how to headshot?
I seriously don't get this, friggin Spikers, Plasma Pistols and Plasma Rifles are capable of headshotting me in one-shot. How is this even possible?
I tried to tackle the LASO challenge, almost at the end of the mission, and one random plasma shot or spike hits me in the head, and BAM! Dead. Is this a glitch, anyone else experiencing this?

Not like that in Multiplayer they can't. You're just unlucky
