Saving legendary engram
If you save your legendary engrams till the next dlc will they become the new gear and weapons?

No, that won't work. HOWEVER, If you level up your cryptarch and factions right after, you can get some cool new loot. So I'd recommend getting them all to level 2.9 then have a bunch of bountie ready to turn in after. 1 bounty per faction to rank them all up should work nicely.
