I am currently working on building my collection of different armor sets, and it's a very painful and frustrating process. I hate not being able to not simply buy the specific legendary item I want from a vendor, and I don't enjoy being forced to gamble on what my efforts will yield. There are ways to make this gambling less painful though.
I know that if it was possible, letting players just buy all the legendaries could lead to people getting everything they want way too fast, but Bungie could just make legendary items very expensive (shards + glimmer + tokens), or just limit purchases to one per vendor per week. At the very least, let us pick if we get weapons or armor.
One thing I especially hate is how I can't inspect the rank-up engram until AFTER I've already donated my reputation materials. This is significant because [b]some possible rewards for ranking up change every five minutes. I don't want to waste my reputation materials only to find out that the rank-up engram can't give me the specific item I want.[/b] I should be able to see the current loot pool before deciding if I want to gamble away my reputation materials. One way I've tried getting around this issue is to put the materials in the vault, go to the vendor to inspect the engram, and if the items you want are in the loot pool for the current five minutes, go back to the vault and get the materials to donate before the five minutes is up, but this is extremely tedious. This can be very hard to do in time when the vendors are in a destination separate from a social space with a vault.
This topic isn't about the MIDA, the Nightfall timer, the lack of random weapon perks to soul-crushingly grind for, nor is it about bashing Destiny 2 or Bungie, so I don't think it will gain much traction. Nevertheless, I think it's an important subject, and something with a lot of room for improvement.

I completely agree with you. At this point in the game it is very frustrating grinding your life away, hoping that you'll get the piece of armor you want. Dont get me wrong. Im absolutely loven the game. But this has to be one of the most mind numbing parts of it.
