For example, the i5-4670K and Xeon E3-1225 V3 are very similarly priced. However, I have yet to see one in a build log. Does it have to do with the way they overclock?

Some Xeons are decent for overclocking, but a lot Xeon mobos don't support it. What it really comes down to is marketing. Xeons are marketed toward servers. A Xeon would work perfectly fine for gaming, but it isn't advertised in places where gamers go.
