Why do people get so offended and/or upset about your beliefs?

Because they make them realize that their own beliefs are not so absolute as they assumed. The same thing happens with those that suddenly have their religion challenged. I argue that the same thing is going on here...

I don't believe in evolution. Another example of why I still don't is what you've just pointed out: we humans, as a species, generally seem to be the only species that is trying to "evolve" to use our brains less. With a tendency like that, there's no way we'd be at the top of the food chain. Or maybe that's just generally b.net users. Although I respectfully don't agree with some of your theories, don't let these people's ridiculousness curb your open-mindedness!

You aren't forced to believe it, you aren't forced to read it. The truth will sort itself out. If people realized this, they wouldn't get so easily triggered.
