As for the Blue Sentinels, is there any particular reason they only used cracked blue eye orbs, and not a whole blue eye orb? And do they invade for the same reasons as the Darkmoon Blades? (Invading players who invaded and killed the master of a world)

No clue why they're cracked, but yeah thy invade for the same reason. They can also be summoned mid-invasion to help people.

They are almost guaranteed from the old knights

They're fairly easy. You can buy them and they are relatively common drops for certain enemies in an area.
