The issue I have with your first Exo theory is that it would be impossible for them to reproduce and there would only be a finite number of individuals. Once they are killed/destroyed then the population is one step closer to extinction. They could produce the robot but there would be no brain to control it. If your species was threatened by extinction, that would not be the best way to go to survive.
I think they are either cyborg humans or aliens of some kind, but are more organic than machine. The name Exo makes me think they are named for wearing a distinctive exoskeleton armour, which is simply an external protective layer, perhaps in order to breathe and enhance their natural abilities. I liked the theory I read that they were severely injured in battle and were fitted with cybernetics to keep them alive, like Darth Vader or General Grievous.

Does anyone think it would be cool if the Exo were like a mix between the Quarians and the Geth from Mass Effect?

I think it'd be cool if I could just be a straight up geth...

They didn't necessarily do it to escape extinction, but rather to escape biological limitations like disease, hunger, and fatigue. As you said, this does present the threat of a finite number of individuals. To combat this, when an Exo unit sustains X amount of damage, the system will evacuate all the data contianed within the Exo to a cloud of storage. The data would stay there, inactive, until a new Exo unit can be produced, or the old unit could be restored to a functioning state. I've seen many theories stating that the Exo's are more-or-less mobile life-support systems, and this is a totally plausible theory. However, these are the theories that first came to mind when I learned of the Exo, and I've been elaborating on them ever since.

So effectively they would be either immortal or clones. The data would be the same. That would still limit the number of "personalities". I'm sure we'll find out soon enough.
-
Yes, their minds and personalities would theoretically be immortal, but as a result the species can neither expand nor shrink. The various personalities would never die, but they would always exist.
-
Yeh I guess that would ultimately be survival, even if is confined to machines. Good point.

Personalities are also given by a series of memories, which change all our reactions, and it's IMPOSSIBLE to have the same memory information until the final breath.
