Soldier in all three.
Im going to try Infiltrator on my new playthrough.. I could never use any of the others I cant stand having a only a hand gun or SMG as my only weapon.

In ME1 you can use a bonus power to give your characters more weapons, for instance my Adept uses a shotgun, but I could have taken assault rifle or sniper rifle training. In ME2 you can get additional weapons training on the Collector Ship mission, if you're using a class that doesn't have access to either shotguns, sniper rifles, or assault rifles. Soldier is the most boring class. Might as well go -blam!-ing play Gears of War or some shit if all you're going to do is shoot things.

Powers more than make up for the lack of an assault rifle. Plus, in ME2 you can get training for a new weapon type midway into the game, so, yeah.
