Obviously she's crazy but i don't understand what the thought process to such erratic behavior could be, maybe someone knows better.

There isn't much of a thought process to that kind of behavior, just reaction. She seems to have some weird internal dialogue and conflict thing going on, and you are experiencing her working through it. Cool, but scary. Buy pepper spray, or a wrench, whichever you can wield better.
