that the open beta conveinently gave us the only boss fight that isn't an enlarged, recolored, bullet sponge?
Seems strongly to me that the only reason that fight is even different, was specifically to hype Destiny up in open-beta and launch game sales.

The entirety of the beta was done much better than the rest of the game. I suspect so for the very reason you stated. More appeal. I also noticed this, with the music being much more epic, more cut scenes than the rest of the game, and much better storytelling.

Which boss, the Tank? Because the Tank is interesting until your idiot teammates don't know what the red line indicates. Even still, it's a sponge.

What boss fight do you mean? Sepiks Prime? Uhh, he is an enlarged, not even recoloured bullet sponge of an everyday Servitor. So I don't know what your talking about.

Duh... Marketing Tool. Ever notice how singles released before an album to "Hype it up" sound different and are recorded better? I.E. Hero by Skillet, Cauterize by As I Lay Dying, and In Due Time by Killswitch Engage. Its completely intentional...

Yup pretty much
