That's a bit of a tall order. I am not too versed on 7.62x39 but I know it's not the most accurate cartridge in the world, especially not out of the AK platform. You might be able to find a fairly accurate 7.62x39 bolt gun, but eh... You are not going to get sub moa accuracy with that cartridge like you would with say .308 or the likes. It's also not really that long range of a cartridge either. It's an intermediate cartridge designed for engagements up to 300 meters. If you want something longer range and more accurate look at Veprs in 7.62x54 if you absolutely have to have slav shit.

In all seriousness though, An Sks would be a pretty good choice, they're fairly cheap, reliable, in 7.62x39. But it's isn't an AK platform, but it is Russian.
