I don't think what they found was a simulation. The Vex are known time travelers. The Vex share one mind. I think they found a recording of what has (to the Vex) already happened.

Yoor thought on the "shared minds" maybe skewed, this is the only vex present in the lab. So it is able to gather information by itself and when re-united with other vex its almost instantaneous in the way it will share what it learned while alone.

Valid point. But if it had the info already in its memory it could really unsettle its captors. Just playing devils advocate. I have no idea what is going on just speculation. Please keep posting stuff it's good to bounce ideas off of each other.

Agreed and Likewise! You should consider that the vex may not not have seen, heard of, or encountered them until it was captured to be analyzed by these labrats in said lab, by what we can assume would be guardians. That being said, from what it knew about guardians / humans etc already was already being built upon and it was always collecting information about what was going on even while being immobile.

So from what it knew up till what it was learning while being captive and transported its likely that it was using that to alter its thoughts about how and what its captors were doing to it? Maybe I dunno.
