The grimoire doesn't say that the vex are humans, it only says that a single vex unit is capable of processing its own reality in order to predict the actions of its enemies. This manifests in a simulation of the ishtar scientists and they begin to question whether they exist in the true reality or one simulated by the vex.

They say they infer. They mean they have imagination and that they know us and then there's also the fact that they use all that computing power to run all those imaginative outcomes. One of them flat out states the Vex are us. Now, I'm not saying they are us as we exist now, but as we exist in the far far future in a species far divorced from our own.
