This is more like a "mental torture" and is similar to the chinese "water-dripping-on-head" Okay, so the subject would be tied down to a table and water would constantly drip on his forehead at a rate of 1 drop per second. Non-stop 24/7. Food tubes would be connected into him so he doesn't die in the torture process. The person would be in a box, so the water level would slowly rise. After 5 days, the water drop rate will slowly increase until it reaches 2x it's original speed. After 10 days, the speed would increase again to 3x the orginal speed. After 15 days, the speed would increase to 4x the orignal. And so on until it caps off 7x original speed at 35 days. The additional water drop rate increase will also wear away the spot on his skin where the water falls, causing additional damage-over-time. Eventually, when the water reaches his mouth, he will slowly drown himself to death (because his head will be restrained of movement as well). Yes, even though he can drink it, if you drink more than 1 gallon of water in less than 1 hr, you will die. Also, he has to pee eventually too...

Points for the fact it would take months to reach a high level

You may want to re-read, made some changes.

Also, the water wouldn't just strip away skin, but cause a fleshy indent in his head.
-
Can't he just drink it??
-
Okay I made some changes in an edit. Water drop speed increases. Also, if you drink 1 gallon of water in less than 1hr, then you will die due to the overflow of water.

Not if osmotic pressure was rebalanced with salts/sugars...

Umm.. Wouldn't making the water over 25% salt just make the person super-wrinkly due to areas of high water concentration (in person) move to areas of low water concentration (in water around him). Plus, I don't think you could move water out of the stomach/intestines that fast..

then piss
