From what I've heard on the most recent GDC done by Bungie, gear colour is not player-defined and is completely dependent on the gear. They said that they've made an effort to make sure the colours harmonise with each other, but after seeing this, I have my doubts.

We've come to the conclusion that gear you find have colours depending on their level, but considering the emphasis out on customization in Bungie games you'll be able to change its colour afterwards. The initial colour is more of a way for players to easily identify gear, based on its tier-specific colours.

I heard I an update that you'll be able to choose the appearance of the armor color but if you go into your menu to customize, the fill around the title of the armor will be the rank color.

Probably. We know that basic stuff is white, green is common, Superior is purple and Exotic is gold. (For weapons at least.)
