In the demo, Joseph Statens Guardian was named Warlock Deckard. Unless that's his gamer tag, yea you'll be able to.

Deckard is Joe Statens gamer tag and I would assume his PSN as well, and Oryx BNG is also the PSN of darler, the woman who was in the demo. Based on that it looks like you won't be able to name your guardian.
