Because clicking buttons to make virtual numbers go up isn't satisfying or fun.

Well you actually could stop clicking after a certain point because it becomes obsolete. It's more of a office game you do while working on something else tbh

So after a while the game literally plays itself, and you don't even have to watch?

Just about, it's kinda like that other game called CandyBox. Once you earn around i think 2k or 5k Cookies per second there's no real point in clicking the cookie , you just basically check in every 5 or so minutes and buying more upgrades. Even more satisfying now that the developer got it updated!
