I've seen numerous posts regarding the Vex being time traveling robots from the future. Since Mercury is referred to as being The Union between the past and the future, could that possibly be their home? This concept art also leads me to believe that.

Their giant citadel building is on Venus. And so is the well famed Vault of Glass with Vex architecture. I guess Venus is their base of operations. The only rendered image of Mercury was in a trailer for a second. Mercury might be DLC. But Bungie can surprise by having it on launch, but I guess not. You might be right that the main inhabitance of Mercury is indeed Vex. Because which organic life form lives comfortly with that amount of sunlight?

This post is over a year old, lol. But no problem, it's still interesting stuff. I'm pretty sure the few planets they showed in the Beta were only what they let us explore at the time. There will most likely be more., so we'll just have to wait and see where the Vex are at launch!
