The field you need is indeed transferStatus.
0 = unequipped
1 = equipped
2 = non-transferrable unequipped (i.e. subclasses, etc.)
3 = non-transferrable equipped

Thanks! I played around a bit more and noticed Gunsmith test weapons show as 2(not equipped) & 3(equipped) which all matches with your descriptions.
