First from me, Assassin's Creed 2 opening theme. It's so soothing and I just love it!
Edit 1: OMG they just played this on a mission in ACU, I've never been so Stealthy on any game before!

Sky Odyssey and Shadow of the Colossus. Both games gave the same composer. It goes without saying both soundtracks are perfect.
