  • Of course, we'd need to know what ingredients you have access to in order to provide you with appropriate recipes.

  • Pasta primavera is always easy, cheap and healthy. If I have one piece of advice though, nail dessert and any cooking blunders won't matter. Girls are always smitten by a nice dessert. A baked apple has always worked for me. Good luck.

  • In that case, try a bolognase. Two onions, some garlic, mince, two tins of canned tomatoes & two tins of water, herbs, as well as some red wine at the end. What herbs, I'll leave to you. [Edited on 2/8/2005 11:23:14 AM]

  • I like the pasta ideas. You could keep it simple. Stew up some pasta noodles [whatever you have] heat up a bowl put olive oil in the bottom wait till your girl friend is about to arrive or is already there throw in your cooked pasta toss in some salt, pepper, sun-dried tomatoes, a few olives, onions whatever you like/have toss a small handful of parmasian cheese on top get a loaf of french bread from your local bakery cut it into slices melt some butter and garlic into a bowl spread it on the slices bake for about 7 minutes set-up the suff on the table make sure no one is around yell -BAM!- There you go. Cheap, easy, healthy meal for two. You are very sweet to do that for her. [Edited on 2/8/2005 11:33:06 AM]

  • There's lots that you can do, here's one that I used to use a lot in my single and budget conscious days. Chicken Santa-Fe Take boneless skinless chicken breasts (even cheaper if you get them with bone and skin and remove those yourself) and wrap them with bacon strips. Usually 4 strips will cover and surround a breast. Place then in a lightly oiled baking dish and bake uncovered in a 350 F oven until the bacon starts to crisp (around 20 minutes). Pour a jar of salsa (your choice on the spiciness) over the top, return to the oven until the salsa is bubbling. Remove again and top with grated cheese (colby, cheddar, jack, your choice) and return to the oven until the cheese melts or even lightly browns. Serve that with yellow rice on the side... And whoever suggested dessert? Good recommendation! Chocolate fondue is great fun. Boil water in a saucepan, float a smaller saucepan in the water. (if you have a double-boiler, even better) Add chocolate and stir as it melts. Have sliced fruit, marshmallows, nuts, bananas ready and just dip and enjoy. It's a VERY interactive dessert, and keeps you and your guest close over the fondue. Plus, if the dipping items run low, you can (if the rest of the meal was a hit) improvise on dipping other items in chocolate. *wink* Good luck and more than anything, don't make the meal the focus. Make her enjoyment the real purpose of it. She'll recognize the difference and appreciate it all of the more. [Edited on 2/8/2005 1:29:46 PM]
